In today’s episode of Virthli Kitchen, we bring to you a very simple, yet utterly delicious recipe that is quite common among Hmar households (and villagers) who do not have access to spices (masala).

Virthli Kitchen Episode 1: Cooking Beef With Potatoes Without Spices
Ingredients:
1. Beef - 750 grams, cut to small sized pieces
2. Potatoes - 1 large or 2 medium sized, cut to medium sized pieces
Marinade Mixture:
3. Mustard oil - 2 teaspoon full
4. Onion - 1 large, sliced
5. Ginger & Garlic - minced/paste, 2 tsp
6. Turmeric Powder - 1 tsp
7. Red Chilli Powder - 1 and half tsp
8. Salt - 1 and half tsp
9. Dried Red Chilli Flakes - 1 handful, or less depending on how spicy you want your dish
Extra Ingredient: Wild Coriander - 7 leaves, cut to small pieces.
Procedure:
1. Mix beef with all marinade mixtures in a pressure cooker.
2. Let it sit for 20 minutes (marinate).
3. Cook the mixture on medium flame until moisture from the mixture evaporates (roughly 15 minutes).
4. Add potatoes and mix well.
5. Pour water into the mixture (pour enough water to completely cover the entire mixture and more.)
6. Close the lid of your pressure cooker and cook for 30 - 40 minutes (10 whistles or more). Beef with bones takes longer to cook, so 40 minutes is usually a safer bet.
7. Wait for the pressure to completely release on its own.
8. Open your cooker and add wild coriander. (optional)
9. Cook for 5 minutes on high flame to soften the wild coriander leaves. (optional)
